In 2002 there were 202 wineries in SA in 2010 there are 585 farms producing wine, the industry is mushrooming. Wine making techniques change and technology evolves and with the introduction of new capital into this industry people are doing everything they can to capture a niche in the highly competitive market. South Africa is part of the new world of wine, the wineries presented in this book are a representation of the evolution of the industry, the way it appeals through architecture and philosophy to the sophisticated wine drinking market. Organic is the new buzzword in farming, gravity processing of grapes is popular, hand sorting is favoured among the discerning, each wine maker has their preferred methods and there are aesthetic concerns too, creating a brand that appeals on so many levels.
